Mango Salsa with Solara Æterna

A bright, fresh mango salsa with sweet fruit, lime, and a kick of Solara Æterna hot sauce balancing the heat against the sweetness.

Ingredients

  • 2 ripe mangoes, peeled and diced
  • ½ small red onion, finely diced
  • ½ red bell pepper, finely diced
  • 1 jalapeño, seeded and minced
  • ⅓ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tsp Solara Æterna hot sauce
  • ⅓ tsp kosher salt

Instructions

  1. Combine the produce: In a medium bowl, combine the mango, red onion, bell pepper, jalapeño, and cilantro.
  2. Dress and season: Add the lime juice, Solara Æterna hot sauce, and salt. Toss gently until everything is evenly coated. Taste and add more hot sauce if you want more heat.
  3. Rest and serve: Let the salsa rest 15–20 minutes so the flavors meld and the onion mellows, then give it a final toss before serving.

Tips

Solara Æterna is built on Carolina reaper and habanero, so start with 2 tsp and taste before adding more — the salsa should be sweet and bright with a building heat, not punishing. The sauce's own brown sugar and vinegar tie right into the mango and lime. Let it rest at least 15–20 minutes before serving so the flavors meld and the onion softens; it keeps 2–3 days in the fridge, though the texture is freshest day one. If your mangoes aren't very sweet, a small pinch of sugar helps balance the heat.
